Ingredients

  • 1 ripe Avocado
  • 2 tbsp lemon juice
  • 1 Garlic clove
  • 1 small white onion
  • Salt
  • black pepper (freshly ground)
  • Tabasco
  • 1 beef tomato
  • 4 sprigs coriander leaves
  • 12 slices multigrain baguette

Instructions

    Cut the avocado in half lengthwise, remove the pit and scoop out the flesh with a spoon. Immediately drizzle with lemon juice and mash well with a fork. Peel the garlic clove and squeeze it into the mixture. Dice the onion finely and add it. Season with salt, pepper and Tabasco to taste.

    Preheat the oven to 220°C (428°F). Wash the tomato, halve it, remove seeds and dice into small cubes. Rinse the coriander, shake dry and roughly chop.

    Place baguette slices on a baking tray and roast in the hot oven for about 3-5 minutes.

    For serving spread the warm avocado puree onto the toasted slices, top with tomato cubes, season with salt and pepper, sprinkle with coriander and serve immediately.
