Mini Pizzas

Ingredients
- 400 g flour
- 1 tsp sugar
- 1 tsp salt
- 0.5 cube Yeast
- 2 tbsp olive oil
- 1 Shallot
- 1 Garlic clove
- 1 tbsp Olive Oil
- 300 g passata (canned)
- 1 tsp sugar
- Salt
- Pepper
- 4 mozzarella balls (125 g each)
- 5 tomatoes
- 200 g sheep cheese

Mix the flour with the sugar and salt. Dissolve the yeast in 200 ml lukewarm water. Add to the flour along with the oil and quickly knead into a smooth dough by hand. If necessary, add more water or flour. Place the dough in a bowl, cover, and let rise in a warm place for about 1 hour.

Meanwhile, peel and finely chop the shallot and garlic. Sauté in hot oil until translucent, then add the passata. Simmer gently for about 15 minutes, stirring occasionally. Add sugar and season with salt and pepper.

Drain the mozzarella and slice thinly. Wash the tomatoes, remove stems, and slice. Drain the sheep cheese and cube it.

Preheat the oven to 200°C (400°F) with both top and bottom heat and line a baking sheet with parchment paper.

Knead the pizza dough again. Divide into about 25 equal pieces, shape into balls, roll each to about 7 cm diameter, forming a small edge. Spread 1 tbsp tomato sauce on each mini pizza, top with a slice of mozzarella and tomato, then scatter cheese cubes. Bake in the oven for about 15 minutes until golden brown.
