Arugula and Bell Pepper Salad with Mozzarella

Try this fresh arugula salad with mozzarella and a bright lemon-balsamic dressing from Spoonsparrow!

Ingredients

  • 0.5 lemon (juice)
  • Salt
  • Pepper (freshly ground)
  • 1 tsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 tbsp small capers
  • 1 Shallot
  • 1 red bell pepper
  • 1 bunch arugula
  • 150 g small mozzarella balls
  • 2 tbsp green pitted olives

Instructions

    Whisk lemon juice, salt, pepper, balsamic vinegar and olive oil together. Add capers and stir well. Peel the shallot, slice into rings and add to the dressing.

    Wash, deseed, quarter and slice the bell pepper into strips. Rinse the arugula, dry with a salad spinner, then tear into bite‑sized pieces. Drain the mozzarella balls. Arrange all salad ingredients on a plate and drizzle the dressing over them. Garnish with olives.
