Crispy White Bread with Mackerel Salad

Ingredients
- 250 g fresh mackerel fillet
- Salt
- Pepper (freshly ground)
- flour (for dusting)
- 40 ml olive oil
- 2 red chicory hearts
- 1 small Grapefruit
- 1 tbsp mustard
- 2 tbsp white wine vinegar
- 8 slices French country bread
- watercress (for garnish)

Wash the mackerel fillet and pat dry with paper towels. Cut into bite‑size pieces, season with salt and pepper, then dust lightly with flour. Heat 10 ml olive oil in a skillet and fry the fish pieces for 4–5 minutes until golden. Remove from pan and let drain.

Meanwhile clean and wash the chicory, slicing it into strips. Peel the grapefruit and separate the segments between membranes. Whisk together mustard, white wine vinegar and remaining olive oil to make a dressing.

Toast the country bread. Arrange the fish, chicory strips and grapefruit segments on top. Garnish with watercress and drizzle with the dressing.
