Colorful Salad with Mango and Ham

Ingredients

  • 3 romaine lettuce hearts
  • 0.5 bunch spring onions
  • Lemon balm
  • 0.5 Galia melon
  • 1 Mango
  • 100 g Parma ham (thin slices)
  • 200 g small mozzarella balls
  • 1 tbsp Lemon Juice
  • 1 tbsp White Wine Vinegar
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp almond sticks (for garnish)

Instructions

    Wash, trim, and dry the romaine hearts; set aside 8 larger leaves. Cut the remaining leaves into strips.

    Wash, trim, and slice spring onions into fine rings; add to the lettuce strips. Finely chop lemon balm.

    Pit a half of the galia melon and use a melon baller to scoop small balls. Set aside the melon quarters.

    Peel the mango, remove the flesh from the pit, and dice it into cubes.

    Slice the ham into strips and combine with mozzarella balls, lemon balm, melon, and mango in the salad bowl.

    Roast almond sticks in a dry pan until lightly browned, stirring constantly.

    For the dressing, scrape the remaining melon flesh into a bowl, then blend with lemon juice and vinegar. Whisk in olive oil, salt, and pepper. Toss the dressing with the salad.

    To serve, arrange the lettuce leaves on plates, top with the mixed salad, and sprinkle almond sticks over the top.
