Apricots-Thyme Preserve

Ingredients

  • 1 kg apricots (ripe)
  • 500 g nectarines
  • 4 tbsp Lemon juice
  • 4 sprigs thyme
  • 500 g fruit sugar (3:1)

Instructions

    Wash the apricots and nectarines, drain well, halve them and remove pits. Blend the nectarines with half of the apricots and the lemon juice in a blender until smooth. Chop the remaining apricots finely.

    Add the fruit puree together with the fruit sugar and thyme to a pot and stir while bringing to a boil; simmer for about 4 minutes, stirring constantly. Remove from heat, discard the thyme sprigs, fill hot sterilized jars completely, seal immediately and let cool.
