Ingredients

  • 3 cm fresh ginger
  • 800 g carrots
  • 3 untreated oranges
  • 2 untreated lemons
  • 500 g gelatin sugar (2:1)

Instructions

    Peel and finely grate the ginger and carrots. Halve the oranges and lemons and squeeze out their juice.

    Mix the grated ginger, carrots, and gelatin sugar with the citrus juices; transfer to a pot and let steep for about 1 hour.

    Bring the mixture to a boil and simmer for 4 minutes, stirring occasionally.

    Fill well sterilized jars with the hot jam, seal tightly, set aside for about 10 minutes, then cool completely. Turn upside down and allow to fully chill before storing in a cool, dark place.
