Ingredients
- 1.5 kg zucchini
- 500 g sugar
- 500 ml white wine vinegar
- 500 g onions
- 1 bell pepper
- 1 bell pepper
- 3 tomatoes
- Salt
- pepper (ground)
- 2 tbsp Curry Powder
- 1 tbsp sweet paprika powder
- 2 tbsp flour

Wash the zucchini and cut into small pieces. Peel and chop the onion. Wash, clean, halve, seed, remove all white membranes from the peppers and slice into strips. Briefly blanch the tomatoes, peel, quarter, seed and finely chop.

Add vinegar, sugar and spices to a pot and bring to a boil. Add the vegetables to the broth, bring to a boil and simmer until tender. Then whisk flour with a little water until smooth and stir into the vegetables, bring back to a boil and let thicken. Fill prepared jars with twist-off lids immediately, seal. Store in cool dark place or sterilize in canning jars at 100°C for 5 minutes.
