Apricot UFOs

Apricot UFOs: a low-fat, high-fiber snack packaged as a small bite of apricots. The ideal satiating treat between meals.

Ingredients

  • 250 g dried apricots (soft apricots)
  • 75 g cashew nuts
  • 75 g fine rolled oats
  • 6 tbsp orange juice
  • 40 baking sheets (4 cm diameter)

Instructions

    Finely chop the apricots and cashews with a large knife or pulse them in a food processor.

    Knead the oats and orange juice together, adding more juice if the mixture is too firm.

  3. 3.

    Shape walnut-sized balls with your hands and gently press each between two baking sheets. The UFOs can be stored for 3-4 days in tightly sealed jars at cool temperatures.
