Ingredients
- 500 g apricots
- 125 g sugar
- juice of 1 lemon
- 500 ml white rum
- 2 sticks cinnamon
- 3 star anise

Boil lemon juice with sugar, dissolve the sugar and simmer for about 1 minute, remove from heat and stir in the rum.

Wash apricots, rinse, peel, halve and pit them. Layer apricots in a jar, inserting halved cinnamon sticks and star anise between layers, then fill with the rum syrup.

Seal the jar and let it steep for about 3 weeks.
