Apricot-Almond Cream

Ingredients

  • 100 g unsulfured dried apricots
  • 50 g fresh dates
  • 100 ml cloudy apple juice
  • 50 g almond kernels
  • 1 tsp toasted sesame oil
  • 2 Tbsp whipping cream
  • 1 tbsp Lemon Juice
  • pinch ground cinnamon
  • ground vanilla

Instructions

    Cut the apricots into small pieces and place them in a porcelain bowl. Pit the dates, cut them finely, and add to the apricot pieces. Pour apple juice over the fruit and cover; refrigerate overnight.

    Place the almonds in a porcelain bowl, pour boiling water over them, let soak briefly, then remove skins and dry.

    Blend the dried fruits with the apple juice and almonds until smooth. Stir in sesame oil, cream, lemon juice, cinnamon, and vanilla.
