Apple Cake with Cranberries

Ingredients
- 250 g butter
- 100 g whole cane sugar
- 1 pinch salt
- 4 eggs
- 2 tsp Baking powder
- 500 g spelt flour type 1050
- 80 ml milk
- 600 g apples
- 100 g dried unsweetened cranberries
- 2 tbsp lemon juice
- 0.5 tsp vanilla powder
- 75 g ground almonds
- 0.5 tsp cinnamon
- 2 tbsp honey
- 40 g almond slivers

For the dough, beat 200 g butter with whole cane sugar and salt until fluffy. Gradually fold in the eggs. Mix baking powder into 400 g flour and alternately stir into the cream with milk to create a smooth, spreadable batter. Pour into a greased pan and level the surface.

Peel, quarter, core, and slice apples into strips. Combine cranberries, apples, lemon juice, and vanilla powder; distribute evenly over the dough.

For the crumble topping, rub remaining flour with almonds, cinnamon, honey, and leftover butter between your hands until crumbly, then sprinkle almond slivers on top of the fruit. Bake in a preheated oven at 180 °C (fan: 160 °C) for about 50 minutes until golden brown; if it darkens too much, cover loosely.
