Ingredients

  • 300 g peaches
  • 300 g apricots
  • 500 g gelesugar
  • 1 untreated lemon (juice and zest)
  • 1 cinnamon stick
  • 60 ml orange liqueur

Instructions

    Heat the peaches and apricots, cool them, peel, halve, pit, and roughly dice. This should yield about 500 g. Adjust the gelesugar to match this amount if needed. Mix the sugar and lemon juice with the fruit and let it steep covered in a pot for about 3 hours.

    Add the cinnamon stick and liqueur, then bring to a boil while stirring. Boil vigorously for about 4 minutes with constant stirring.

    Perform a gelling test (place a dollop on a cold plate; if the preserve does not set, add more sugar and simmer briefly), remove from heat, discard the cinnamon stick. Fill prepared jars, seal tightly, place lids on top, let cool slightly, then invert and allow to cool completely.
