French Apricot Jam

Ingredients
- 1 kg apricots
- 1 untreated lemon
- 500 g gelatine sugar (2:1)
- 40 ml orange liqueur

Boil the apricots, shock them in cold water, peel, halve, pit and cut into pieces. Wash the lemon hot and grate its zest. Squeeze out the juice. Mix both with the apricots and gelatine sugar in a large pot. Let it steep for about 30 minutes so some juice forms.

Then bring to a boil while stirring and simmer for 3-4 minutes, letting it bubble. Add the orange liqueur and perform a setting test.

Fill the jam into prepared jars until full and seal immediately. Allow to cool.
