Apricot Compote

The apricot compote from Spoonsparrow is always a hit! Natural fruit sweetness eliminates the need for added sugar. It pairs perfectly with grilling.

Ingredients

  • 600 g apricots
  • 1 Organic lemon
  • 1 vanilla bean (or ½ tsp vanilla powder)

    Blanch the apricots in boiling water, then peel them. Cut the apricots in half and remove the pits. Wash the lemon, pat dry, grate its zest finely. Halve the lemon and squeeze out the juice.

    Combine both with 100 ml water in a pot and bring to a boil. Meanwhile split the vanilla bean, scrape out the seeds, add the seeds and pod to the pot, and simmer for about 2 minutes. Add the apricot halves and let them gently cook covered. Remove the vanilla pod and serve the compote.
