Banana Crêpe with Maple Syrup

Banana crêpe with maple syrup by Spoonsparrow: The fluffy crêpes will surely sweeten your day!

Ingredients

  • 250 g spelt flour Type 1050
  • 2 Eggs
  • 350 ml milk (3.5% fat)
  • 50 ml sparkling mineral water
  • 1 pinch salt
  • 4 tsp butter
  • 2 Bananas
  • 3 tbsp maple syrup
  • raw cane sugar powder for dusting

Instructions

    Whisk the flour with the eggs, milk, sparkling water and salt until smooth. Let the batter rest for about 30 minutes.

    Bake eight crêpes one after another: heat a little butter in a large pan over medium heat, pour in the batter and cook each side for about 1–2 minutes until golden brown. Use up all the remaining batter.

  3. 3.

    For serving peel the bananas, slice them and place inside the crêpes. Drizzle with maple syrup and dust with raw cane sugar powder before serving.
