Apricot Chutney on Rice Crackers

Apricot chutney on rice crackers: This chutney offers everything with zero fat content, absolutely perfect for a quick snack!
Ingredients
- 4 dried apricots (soft apricots)
- 5 g ginger (1 piece)
- 1 pinch dried chili flakes
- 0.5 tsp liquid honey
- 1 pinch cinnamon
- Salt
- 2 stems coriander
- 4 g small rice crackers (with sea salt; 1 small rice cracker)
Instructions

Cut the apricots into 1 cm cubes.

Peel and finely chop the ginger.

Bring the apricots, ginger, 50 ml water and chili flakes to a boil in a pot. Cover and simmer over low heat for 7-8 minutes.

Season with honey, cinnamon and salt. Let cool.

Wash coriander, shake dry and tear leaves. Set aside some leaves for garnish; finely chop the rest and mix into the chutney.

Serve the apricot chutney on rice crackers and garnish with coriander leaves.
