Ingredients

  • 3 sour apples (e.g., Boskop)
  • 1 Vanilla bean
  • 125 ml dry white wine
  • 4 tbsp apple juice
  • 45 g sugar
  • Salt
  • freshly grated nutmeg

Instructions

    Wash the apples, quarter them, remove the core and dice finely.

  2. 2.

    Split the vanilla bean lengthwise, scrape out the seeds and add the seeds, bean, and apples to a pot.

    Add the wine, apple juice and sugar, stir and simmer for about 35 minutes over medium heat. Depending on heat and desired consistency, simmer slightly longer or shorter.

    Season with salt and nutmeg, pour hot into sterilized jars, seal and set on top of the pot to cool.
