Apple Fritters

Ingredients
- 2 eggs (medium size)
- 150 g flour
- 175 ml milk
- 25 g butter
- 4 apples
- 6 tbsp sugar
- zest of 1 lemon
- cooking oil
- 4 tsp cinnamon

Separate the eggs. Chill the egg whites. Whisk flour with milk and yolk until smooth. Let the batter rest for 20 minutes.

Meanwhile, peel the apples and remove the core with an apple corer. Slice the apples into about 1 cm thick rounds. Place them in a shallow bowl and mix with 2 tbsp sugar and lemon zest.

Melt butter, beat egg whites to stiff peaks. Fold the melted butter into the batter and fold in the beaten egg whites. Heat cooking oil to 170°C. Dip apple slices through the batter and fry until golden brown.

Drain the apple fritters on paper towels. Mix remaining sugar with cinnamon and toss the still hot fritters in the mixture.
