Apple Cake with Glaze

Ingredients
- 500 g apples
- 2 tbsp lemon juice
- 1 tbsp honey
- 120 g butter
- 60 g raw cane sugar
- 1 tsp vanilla powder
- 1 tsp lemon zest
- 3 eggs
- 250 g spelt flour Type 1050
- 1 tsp Baking powder
- 6 tbsp milk
- 20 g powdered sugar from raw cane sugar

Peel, quarter, core and halve the apples. Whisk together lemon juice and honey, then drizzle over the apple quarters. Cover and let sit for 30 minutes.

Beat butter until fluffy, then fold in raw cane sugar, lemon zest, eggs and vanilla powder. Mix flour and baking powder, alternating with milk into the batter. Grease the pan if needed. Pour batter into the pan and smooth the top.

Arrange the apple pieces on top and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 50 minutes. Remove from the pan and cool. Whisk powdered sugar with ½ tbsp water to make a thick glaze, then brush the cake decoratively.
