Apple Wine Cake

Ingredients

  • 250 g flour
  • 1 tsp Baking powder
  • 125 g sugar
  • 1 packet vanilla sugar
  • 1 egg
  • 125 g butter
  • 1 tbsp water
  • 1 kg apples
  • 2 packets pudding powder (vanilla flavor)
  • 750 ml apple wine
  • 250 g sugar
  • 1 packet vanilla sugar
  • 500 g whipping cream
  • a little cocoa powder

Instructions

    Knead all dough ingredients quickly into a smooth dough, wrap in foil and chill for 1 hour. Roll 2/3 of the dough on a greased springform pan (26 or 28 cm diameter) and prick several times with a fork. Set aside the springform rim. Shape the remaining dough into a roll, place it around the rim so that it forms a 3–4 cm high edge.

    Wash, peel, quarter, core, and slice apples thinly; spread them on the base. Sprinkle some cinnamon over them.

    Cook pudding powder according to package instructions but with apple wine, sugar and vanilla sugar, then pour the hot mixture over the apples. Spread the mixture over the cake base and bake in a preheated oven (electric: 170 °C, gas: level 2) for 60 minutes.

    Let the cake stand in an open oven for 1 hour after baking and cool overnight.

    Whip cream until stiff and spread it on the cake. Dust with cocoa powder.
