Ingredients
- 150 g flour
- 50 g sugar
- 100 g butter
- 1 egg yolk
- 2 tbsp cold water
- 70 g pine nuts
- flour (for rolling)
- 30 g pine nuts
- 4 tsp sugar
- 2 tsp ground pistachios
- 1 untreated lime
- 250 g mascarpone
- 5 canned peaches (half each)
- powdered sugar (for dusting)

Mix flour and sugar in a bowl. Add butter pieces, egg yolk and water, then cut everything with a knife until dry crumbs form. Quickly knead the mixture by hand into a smooth dough. Roll the dough on a floured surface into a round shape. Sprinkle pine nuts over it and press them into the dough with a rolling pin. Line a 24 cm tart pan with parchment paper. Place the dough in the pan and prick it several times with a fork. Refrigerate for 1 hour.

Toast pine nuts in a small pan, sprinkling sugar to lightly caramelize them. Finally stir in pistachios. Pour the pine nut crunch onto a plate.
