  • 200 g sugar
  • 1 packet vanilla sugar
  • grated zest of half an untreated lemon
  • 4 eggs
  • 200 g Flour
  • baking powder
  • 800 g sour apples
  • 50 g apricot jam
  • powdered sugar (for dusting)

    1. Using the whisk attachment of a hand mixer, prepare a batter from the listed ingredients. Fill about half of the batter into a greased 26 cm springform pan and smooth the surface. For the filling, peel, quarter, core, slice into wedges, and arrange the apples on top of the batter. Spread the remaining batter over them and level it. Bake in a preheated oven (electric: 160 °C, gas: setting 2) for 45 minutes. Let the cake cool slightly, then release from the pan and place on a cooling rack.

    2. Warm the apricot jam by stirring until smooth. Brush the still-warm cake with it. Toast almonds in a dry skillet and sprinkle them over the cake. Allow to cool. Dust the cake with powdered sugar before serving.
