Apple Spice Jam

Apple spice jam is a recipe with fresh ingredients from the preserves category.

Ingredients

  • 2 kg ripe apples (for 1 l juice)
  • 50 ml lemon juice
  • 400 g pectin sugar (2:1)
  • 1 chili pepper
  • 2 star anise

Instructions

    Wash the apples, quarter them and remove the core. Place in a juicer and collect the juice. Mix the juice with the lemon juice and reduce to about half by simmering. Then stir in the pectin sugar and spices, bring to a vigorous boil under stirring and let it bubble for about 4 minutes.

    Immediately fill the jam into hot-washed jars. Seal the jars tightly and leave them upside down for about 20 minutes to cool, then turn them over and allow to cool completely.
