Pear and Chocolate Jam

Ingredients

  • 600 g pears
  • 1 untreated lemon (juice and zest)
  • 400 g plums
  • 500 g gelatin sugar (2:1)
  • 50 ml cassis
  • 50 g grated dark chocolate

    Peel the pears and cut them into small pieces. Mix with lemon juice and zest in a large pot. Wash, pit, and chop the plums. Add the gelatin sugar to the pot, stir well, and let covered for about 30 minutes.

    Then bring to a rolling boil while stirring constantly. Cook for about 4 minutes, skimming any foam that forms. Perform a gel test by placing about 1 tsp of jam on a small plate, letting it cool briefly, then checking if it sets. If still liquid, cook another 1–2 minutes and retest. Once set, remove from heat and gently stir in the cassis and chocolate. Fill sterile jars to the brim, let them sit upside down for about 10 minutes, flip, and allow to cool completely.
