Ingredients

  • 500 g sour apples
  • 500 g pears
  • 300 g gooseberries
  • 2 untreated limes
  • 1 kg preserve sugar (1:1)
  • 0.5 tsp cinnamon powder
  • 3 Cloves

    Peel the apples and pears, quarter them, remove the core, and slice the flesh into thin strips. Rinse the gooseberries, wash, drain, and mix with the juice of one lime, the sugar, and the spices with the apples and pears. Let the mixture sit overnight to draw out the juices.

    Heat the second lime over boiling water, zest it, then squeeze the juice and add it to the fruit mixture. Bring to a boil in a pot while stirring. Simmer for about 4 minutes until sparkling, pour into prepared jars, seal, flip upright for 10 minutes, then turn over and let cool.
