- 600 g apples
- 600 g pears
- 1 untreated lime
- 2 sprigs tarragon
- 500 g pectin sugar (2:1)

Peel, halve, core, and dice the apples and pears. Weigh the fruit. If the fruit weighs less or more than 1 kg, adjust the sugar to half the fruit amount. Zest the lime and squeeze out the juice.

Combine the fruit with pectin sugar, zest, and lime juice, mix well, and let sit for about 2 hours. Then bring to a boil while stirring and simmer for about 4 minutes until sparkling (perform a gel test). Remove tarragon leaves, fold into the jam, pour into prepared jars, seal tightly, and allow to cool.
