Apple Onion Chutney
Apple Onion Chutney from Spoonsparrow: A culinary accompaniment to cheese or meat
Ingredients
- 300 g red onions
- 600 g tart apples (e.g., Boskop)
- 4 tbsp Lemon juice
- 50 g raw cane sugar
- 50 ml fruit vinegar
- 1 red chili pepper
- 1 tsp peppercorns
- 4 star anise
- 1 tbsp turmeric
- 1 tsp salt
Instructions

Sterilize jars and lids by boiling them in a large pot of hot water for about 10 minutes. Remove the jars from the water and place them upside down on clean kitchen towels to cool.

Peel the onions, quarter them lengthwise, and slice into strips. Wash, peel, and cut the apples into small pieces. Combine the apples and onions in a pot with lemon juice, sugar, and vinegar.

Place the chili pepper, peppercorns, and star anise in a spice sachet or large tea bag and seal it. Add this to the apple-onion mixture along with turmeric and salt. Bring to a boil while stirring constantly, then simmer uncovered for about 25 minutes over medium heat, stirring regularly.

Remove the spice sachet and puree the chutney to your liking. Fill the prepared jars with the chutney, seal tightly, and let cool.
