Ingredients
- 2 young kohlrabi
- 2 small apples
- 1 lemon (juice)
- 2 tbsp walnut oil
- Salt
- a pinch coconut blossom sugar
- 50 g arugula
- 50 g walnut kernels
- 100 g soft goat cheese
- 4 tbsp dried cranberries
- Herb salt
- Pepper
- 1 whole‑grain baguette
Instructions

Peel the kohlrabi. Wash the apples, quarter them, remove seeds, and spiralize both apples and kohlrabi. Mix in lemon juice, oil, a pinch of salt, and sugar, then let sit.

Meanwhile wash and dry the arugula, roughly chop the walnuts, and crumble the cheese.

Fold the arugula into the apple‑kohlrabi mix and divide onto four plates. Sprinkle nuts, cheese, and cranberries over the top, season with herb salt and pepper, and serve with slices of whole‑grain baguette.
