The baked goat cheese on salad from Spoonsparrow is perfect as a light dinner option!
Ingredients
- 100 g mixed leaf lettuce
- 150 g goat cheese (roll)
- 50 g chopped walnut kernels
- 50 g black olives
- 1 tsp coarse mustard
- 1 tsp Honey
- 2 tbsp Apple cider vinegar
- 2 tbsp olive oil
- Salt
- ground pepper

Wash, dry, and tear the leaf lettuces into small pieces. Add the walnuts and olives. Slice the goat cheese into four slices and place on a baking sheet lined with parchment paper. Bake under the preheated grill for about 5 minutes until golden brown.

For the dressing whisk together mustard, honey, vinegar, and oil until smooth, then season with salt and pepper. Toss the salad with the dressing and spread onto plates. Top with the warm goat cheese slices and serve.
