Vegan Bulgur Salad

Vegan bulgur salad from Spoonsparrow tastes great for our veggie friends.

Ingredients

  • 600 ml Vegetable Broth
  • 300 g bulgur
  • 4 tomatoes
  • 4 Spring Onions
  • 4 sprigs Parsley
  • 1 stalk mint
  • 5 tbsp olive oil
  • 3 tbsp Lemon juice
  • 1 tsp hot paprika powder
  • Salt
  • ground pepper

Instructions

    Heat the broth in a pot, stir in the bulgur, remove from heat and let it soak for about 30 minutes. Wash the tomatoes, quarter them, core and dice. Wash the spring onions, trim and slice into thin rings.

    Wash the parsley and mint, shake dry, pluck leaves and finely chop. For the dressing mix olive oil with lemon juice, season with paprika powder, a pinch of salt and pepper.

    Combine the tomatoes, spring onion rings and chopped herbs with the bulgur, then fold in the dressing. Let it rest for about 20 minutes. Season the vegan bulgur salad with salt and pepper before serving.
