Ingredients

  • 600 g ripe apples (e.g., Boskop)
  • 150 ml apple juice
  • 1 cinnamon stick
  • 2 tbsp sugar
  • 1 tsp lemon zest
  • 4 tbsp sugar
  • 4 tbsp chopped almond kernels
  • 100 ml heavy cream
  • 1 Tbsp vanilla sugar

    Peel, core, and cut the apples into large pieces for the compote. In a pot bring together the apple juice, cinnamon, sugar, lemon zest, and lemon juice to a boil; let it reduce slightly, then add the apple pieces and simmer gently for about 10 minutes until the apples soften and break down. Remove the cinnamon stick, puree the compote, and allow it to cool in glasses.

    In a hot pan caramelize the sugar until light brown, add the almonds, spread them thinly on parchment paper, and let set until firm.

    Whip the cream with vanilla sugar until stiff peaks form; place a dollop on each apple compote serving and garnish with a piece of broken almond caramel.
