Spiced Apricot Compote

The spiced apricot compote from Spoonsparrow is perfect for preserving the taste of summer.

Ingredients

  • 1 kg apricots
  • 1 small red chili pepper
  • 1 vanilla pod
  • 1 bay leaf
  • 100 ml apple cider vinegar
  • 100 ml apple juice
  • 80 g honey
  • 0.5 tsp cloves
  • 0.5 tsp black peppercorns

    Steam the apricots hot, cool them in cold water and peel; cut the fruit in half and remove the pits. Cut the chili pepper lengthwise, deseed, wash and chop. Split the vanilla pod lengthwise and scrape out the seeds with a knife. Roughly crumble the bay leaf.

    Boil vinegar with apple juice, 200 ml water, honey, vanilla seeds, bay leaf, chili, cloves and pepper. Add the apricots and simmer for 2 minutes. Pour the hot liquid into clean jars, seal well and let it steep for at least 2 weeks.
