Grandma's Strawberry- Rhubarb Compote

Ingredients

  • 500 g rhubarb
  • 500 g strawberries
  • 1 Organic Orange
  • 6 tbsp sugar
  • 1 tbsp Cornstarch
  • 200 g whipping cream
  • 1 Tbsp vanilla sugar

Instructions

    Clean, wash and trim the rhubarb, cutting into about 3 cm pieces. Clean, wash and quarter the strawberries. Halve the orange and squeeze out the juice.

    Boil the orange juice with sugar in a pot, add the rhubarb and simmer for about 2 minutes. Mix the cornstarch with 1–2 tbsp water, stir it in, then add the strawberries and bring everything to a boil once more. Remove from heat and set aside to cool.

    Whip the cream with vanilla sugar until stiff peaks form. Serve the compote topped with whipped cream.
