Ingredients

  • 1 kg apples
  • 500 g blackberries
  • 0.5 l water
  • 0.25 l white wine
  • 5 juniper berries
  • 2 tbsp honey
  • 350 g gelatin sugar (2:1)
  • 1 packet citric acid

    Wash the apples and cut them into small pieces with the core removed. Add the blackberries, water, and wine to a pot, add the honey and juniper berries, cover, and simmer gently for 45 minutes.

    Line a sieve with a muslin cloth, hang it over a bowl, and press the fruit mixture gently to collect the juice. Measure out 700 ml of juice, mix with 350 g gelatin sugar, bring to a boil, simmer for 4 minutes while bubbling, pour into jars, and seal.
