Ingredients

  • 1 kg blackberries
  • 500 g gelatin sugar (2:1)
  • 2 stalks lemon grass
  • 2 drops bitter almond oil

Instructions

    Wash the berries, drain them, and mix with the sugar in a large pot.

    Wash the lemon grass and gently pound it with a meat tenderizer. Tie the stalks together and add them to the blackberries.

    Stir and bring to a boil, then simmer for about 4 minutes until sparkling. Add the bitter almond oil at the end.

    Perform a gel test, remove the lemon grass, roughly puree the jam, then fill clean jars to the brim and let cool upside down.
