Ingredients
- 300 g milk
- 60 g sugar cane granules
- 0.5 sachet vanilla sugar
- 0.5 untreated orange (grated zest)
- 50 g flour
- 4 eggs
- 75 g almond kernels
- 2 untreated oranges
- 1 tbsp orange juice
- 1 tbsp butter
- 1 tbsp fine breadcrumbs
- powdered sugar
Instructions

Whisk milk with sugar, vanilla sugar, salt, orange zest and flour vigorously. Warm gently while stirring until it boils once. Place the pot in cold water with ice cubes to cool the mixture. Butter four small molds and dust them with breadcrumbs. Separate eggs; beat yolks into the cooled mixture. Squeeze oranges, mix in. Whisk egg whites until stiff peaks form, fold carefully into the batter. Roughly chop almonds and sprinkle over the top. Fill the molds and bake at 180 °C for 35 minutes.
