Ingredients

  • 4 beautiful peaches
  • 150 g sugar
  • 2 sprigs lemon verbena (or 3 sprigs lemon balm or 2 kaffir lime leaves; Asian market)
  • 1 vanilla pod
  • juice of one lemon

Instructions

    Wash the peaches. In a pot bring 300 ml water and sugar to a boil. Rinse the lemon verbena and pat dry. Split the vanilla pod lengthwise and add it with 1 sprig lemon verbena (or 2 sprigs lemon balm or kaffir lime leaves) and lemon juice to the broth. Cook for 5 minutes while stirring.

    Meanwhile bring water to a boil. Add the peaches and let them steep for about 2 minutes. Then drain the fruit, rinse cold, peel, add to the sugar broth and poach covered over low heat for 5 minutes. Remove the vanilla pod and lemon verbena.

    Place the peaches in a bowl. Pour the syrup through a fine sieve over them. Chill the fruit for 2 hours. Before serving garnish with lemon verbena or lemon balm leaves.
