Almond Cookies

Ingredients

  • 250 g butter
  • 100 g powdered sugar
  • 100 g ground almonds (peeled)
  • 250 g starch
  • 1 tsp ground cardamom
  • 150 g pistachios
  • powdered sugar (for rolling)

Instructions

    Knead the butter with powdered sugar, almonds, starch and cardamom into a smooth dough. Wrap in foil and chill for about 1 hour.

    Preheat the oven to 160 °C (320 °F) fan‑heated and line a baking tray with parchment paper.

    From the dough form three equal 2–3 cm thick rolls and cut each into 4–5 cm slices. Shape into balls and place on the trays with space between them. Press a small indentation in the centre of each with a finger to create little rings. Halve the pistachios, lay three halves around the edge of each cookie and press down. Bake for about 15 minutes until light yellow.

    Remove from oven and let cool slightly. Then roll in powdered sugar. Let cool completely before serving, e.g., with tea.
