Almond-Pine Nut Cookies

Ingredients

  • 100 g almond kernels
  • 100 g pine nuts
  • 150 g sugar
  • 1 pinch salt
  • 3 tsp grated lemon zest
  • 1 Egg white
  • 30 g pine nuts
  • 30 g powdered sugar (as needed)
  • 1 tsp lemon juice
  • candied lime slice

Instructions

    Grind half the almonds and pine nuts finely in an electric food processor. Roughly chop the remaining nuts. Mix the finely ground nuts with sugar, salt, lemon zest, and egg white until creamy. Fold in the chopped nuts. Pinch walnut-sized dough balls onto a parchment-lined baking sheet about 2 cm apart. Bake at 180°C (middle rack) for about 10 minutes, then remove and cool on a wire rack.

    For decoration, either toast pine nuts in a dry pan and sprinkle them over the cookies, or whisk powdered sugar with lemon juice into a glaze and coat the cookies, finishing with glaze lines and candied lime pieces.
