- 125 g butter
- 100 g fine sugar
- 0.5 Vanilla bean
- 4 egg yolks
- 60 g ground almonds
- 100 g grated dark chocolate
- 125 g flour
- 75 g cornstarch
- 1 tsp cocoa powder
- 100 g dark couverture

Beat the butter with sugar, the scraped vanilla bean, and eggs until creamy using a hand mixer. Add almonds and grated chocolate, then sift over flour, cocoa, and starch and quickly knead into a smooth dough. Wrap in foil and chill for about 30 minutes.

Preheat oven to 180 °C. Roll out the dough on a floured surface to 3 mm thickness and cut star shapes. Place on parchment-lined baking sheet and bake for about 10 minutes. Remove and cool on a wire rack. Melt the couverture over a bain‑marié and brush half onto the cooled stars.
