Almond Cake

Ingredients
- 500 g flour
- 1 cube yeast (42 g)
- 60 g sugar
- 200 ml lukewarm milk
- 2 tbsp vanilla sugar
- 3 egg yolks
- 0.5 tsp Salt
- 100 g melted butter
- flour (for the work surface)
- 2 Apples
- 200 g butter
- 150 g chopped almond kernels
- 75 g sugar
- powdered sugar (for dusting)
Instructions

Sift flour into a mixing bowl, make a well in the center. Add crushed yeast with 1 tbsp sugar and some lukewarm milk to the well and mix with a little flour to form a pre-dough. Sprinkle lightly with flour and let rise covered in a warm place for about 15 minutes.

Add remaining sugar, vanilla sugar, egg yolks, salt and butter, then knead into a smooth yeast dough. Cover with a cloth and let rise for another ~30 minutes.

Preheat the oven to 180°C (350°F) fan‑forced. Line a baking tray with parchment paper.

Roll out the dough on a floured work surface to match the size of the tray, place it on the tray and press into waves. Peel, quarter, core and thinly slice the apples. Place them in the dough depressions and dot butter across the cake. Sprinkle almonds and sugar over top, bake for 40‑45 minutes. Let the finished cake cool and dust with powdered sugar before serving.
