Almond Orange Cake

- 6 oranges (untreated)
- 6 Eggs
- a pinch of salt
- 250 g sugar
- 300 g ground roasted almond kernels
- 2 tbsp brandy
- fat
- flour (for the pan)

Grease a 24-26 cm springform and dust with flour. Wash four untreated oranges hot, dry them, grate the zest finely. Separate eggs. Beat yolks, salt and 175 g sugar until creamy. Fold in orange zest and ground almonds. Whisk egg whites to stiff peaks, gently fold into batter, pour into pan, smooth top. Bake in preheated oven at 200 °C for about 45 min (cover with foil after ~30 min if needed; test with a skewer). Remove cake and let cool.

Peel three oranges so that the white pith is completely removed. Separate fruit flesh fillets and leave whole or cut into pieces depending on size. Squeeze remaining oranges to obtain about 200 ml juice. Reduce juice and 75 g sugar until half volume. Add brandy, stir in orange pieces, let cool. Top cake with small orange fillets and drizzle with remaining syrup. Chill for at least 30 min before serving.
