Almond Cookies

Ingredients

  • 75 g walnuts
  • 75 g hazelnuts
  • 200 g Flour
  • 100 g sugar
  • 1 pinch salt
  • 1 egg
  • 200 g cold butter
  • 1 tbsp whipping cream
  • flour (for work surface)
  • 150 g powdered sugar
  • egg white (for mixing)
  • silver sugar pearls (or nonpareilles)

Instructions

    For the dough, finely grind the nuts in a food processor. Mix with flour, sugar and a pinch of salt, then sift onto a work surface; create a well in the center, crack the egg into it and scatter butter chunks around the well. Add the cream and quickly knead by hand into a smooth dough, shape into a ball, wrap in cling film and refrigerate for about 30 minutes.

    Preheat the oven to 170 °C (fan) or 340 °F.

    Roll out the chilled dough on a floured surface to about 0.5 cm thickness and cut snowflake shapes with a cookie cutter. Place on parchment-lined baking tray and bake in the preheated oven for about 12 minutes until golden brown. Remove from oven, lift the cookies off the tray with parchment and let cool slightly.

    Whisk powdered sugar with egg white to a thick cream; fill a small piping bag with a round tip and pipe lattice lines or dots onto the snowflakes. Decorate with silver pearls or nonpareilles.
