Ingredients

  • 3 egg whites
  • a pinch of salt
  • 200 g sugar
  • 1 tsp lemon juice
  • 150 g ground walnuts
  • 80 g whole wheat flour
  • vanilla beans
  • 40 walnut halves

Instructions

    Beat the egg whites until stiff, letting in the salt and sugar. Add the lemon juice and continue beating until the mixture shines and soft peaks form.

    Mix the walnuts with the flour and vanilla bean seeds, then fold into the meringue.

    Fill a piping bag fitted with a large round tip and pipe 2 cm diameter clumps spaced 3 cm apart onto parchment-lined baking sheet. Place one walnut half on each dough clump. Bake in preheated oven at 150°C for about 25 minutes. Remove, lift immediately from the tray, and cool on a rack.
