Almond Cookies

- 70 g butter
- 4 eggs
- 250 g sugar
- 1 Tbsp vanilla sugar
- 2 drops bitter almond aroma
- 250 g almond flakes
- 50 g flour

Preheat the oven to 200°C (392°F) with upper and lower heat. Line several baking sheets with parchment paper.

Melt the butter over low heat. Beat the eggs in a bowl. Stir in the butter, sugar, vanilla sugar, bitter almond aroma, almond flakes, and flour until combined. Drop spoonfuls of dough onto the parchment and spread into circles about 7 cm (2.75 in) in diameter with a spoon. Bake for about 6 minutes. Immediately remove from the oven while still hot using a spatula and shape into crescents over a rolling pin if desired. If the cookies are too firm, briefly reheat in the oven before shaping.
