Ingredients

  • 100 g Soft Butter
  • 60 g powdered sugar
  • 100 g flour
  • 100 g Ground Almonds
  • 1 egg yolk
  • 5 tbsp Amaretto
  • 70 chopped peeled almond kernels

    Beat the butter with powdered sugar until fluffy, then fold in flour, ground almonds, egg yolk and amaretto to form a pliable dough. Wrap in foil and chill for 30 minutes.

    Shape small balls (about 2 cm diameter) from the dough, place on parchment-lined tray and press lightly flat. Press a few chopped almond kernels into each cookie. Bake in preheated oven at 180°C (mid rack) for about 15 minutes until golden brown. Let cool slightly before transferring to a wire rack to finish cooling.
