Ingredients

  • 100 g flour
  • 75 g butter (in pieces)
  • 60 g starch
  • 60 g sugar
  • 1 vanilla pod (scraped seed)
  • 1 Egg white
  • 150 g coarsely chopped walnuts
  • 70 g butter
  • 125 g sugar
  • 3 Tbsp apricot jam
  • 50 g whipping cream

Instructions

    Mix all dough ingredients together and quickly knead into a smooth dough, shape into a ball and wrap in foil for 30 minutes in the refrigerator.

    Roll out the dough on a greased baking sheet and spread with apricot jam.

    Heat sugar with 2 tbsp water in a small pan until caramelized, stir in walnuts and butter, deglaze with cream and continue to caramelize until golden brown. Spread the walnut mixture over the rolled dough and bake in a preheated oven at 180°C on the lowest rack for about 15 minutes, remove, cool, and cut into triangles.
