Almond Cake

Ingredients
- 250 g butter
- 150 g sugar
- 2 Eggs
- 500 g flour
- 350 g almond kernels
- 200 g sugar
- 150 g liquid honey
- 250 g whipping cream
- potato mash (pre-made)
- 1 egg yolk
- powdered sugar
Instructions

For the dough, beat the softened butter with sugar until creamy. Whisk in the eggs, fold in sifted flour, shape into a ball, wrap in foil and refrigerate for 1 hour.

For the filling, chop the almonds. Roast the sugar until pale yellow. Add the almonds and roast briefly together.

Pour in honey and cream, bring to a boil, then let the mixture cool.

Grease the aluminum pan. Divide the dough into two parts, roll out each part.

Use one portion to line the bottom of the pan, forming an edge. Prick with a fork several times. Spread the filling in a dome shape on top.

Roll long strips from the second dough and lay them over the cake in a grid pattern. Whisk the egg yolk and brush the dough strips with it.

Bake in the oven at 200°C for 45 minutes, then dust with powdered sugar before serving.
