Mandarin Cake

Ingredients
- 175 g flour
- 1 tsp Baking powder
- 65 g sugar
- zest of 0.5 untreated lemons
- 100 g butter
- 1 tbsp cold water
- 2 cans mandarins
- 1 packet clear pastry glaze (for cooking)

Mix flour with baking powder, sugar and lemon zest in a bowl. Add butter pieces and water. Scrape everything with a knife to create dry crumbs. Then quickly knead by hand into a smooth dough.

Grease an oval cake pan. Roll the dough on a floured surface (about 28 cm) and place it in the pan. Press flat with a lightly floured hand. Prick the dough several times with a fork. Bake the base in a preheated oven at 190 °C (gas: level 3, fan: 170 °C) for about 25 minutes. Let the base cool.

Drain the mandarins through a sieve, catching the juice. Replenish the juice to 250 ml with water. Prepare the pastry glaze according to instructions (without sugar).

Place the cooled base on a cake plate, top with mandarins and pour the glaze over it. Allow to set.
